Gluten free, vegan, cardamon orange biscuits.

Comforting and zesty biscuits which are super easy to make, I used maple syrup as a sweetener as it is lower on the glycemic index than regular sugar and contains polyphenol antioxidants, try to buy a good quality dark maple syrup as it is higher in these antioxidants. Cardamon is a wonderful spice which is soothing on the digestive system. With no additives they make great alternative to shop bought biscuits.
Ingredients:
100g melted coconut oil
200g gluten free flour (I use doves farm)
Grated rind of 2 organges
1 tsp ground cardamon
1/2 tsp ground ginger
3 tbsp maple syrup

Combine all the dry ingredients in a mixing bowl.

Add the melted coconut oil and maple syrup and combine to form a soft dough.

Roll out the dough on a baking sheet and cut with a cutter. The dough is quite crumbly so I usually cook the biscuits on the baking sheet to avoid having to transfer them after cutting.
Bake for around 12-15 minutes or until starting to turn golden.
