There is nothing worse than being on a restricted diet and feeling like your missing out. Whatever the reason for avoiding certain foods I think it's important to enjoy yourself at times especially when socializing with friends.
These delicious scones will please everyone! The perfect Sunday treat.
Ingredients
150g gluten free self raising flour (I used Doves Farm)
100g vegan coconut yogurt (I often use strawberry or peach as it gives a lovely flavor!)
1 Tbsp solid coconut oil
1/2 Tsp baking powder
3 Tbsp coconut sugar (you can also use regular caster sugar)
3 Tbsp coconut milk (the carton type such as Koko)
A handful of dried fruit
Combine flour, sugar and baking powder in a mixing bowl. Add the solid coconut oil and rub into the flour to create a fine breadcrumb (I usually use fork and mash it first before rubbing with cold hands).
Next add the yogurt and mix well you can also add the dried fruit at this point. You should now have a soft doughy breadcrumb mixture.
Add the milk (around 3 tablespoons) until a you have a soft dough.
Roll into balls and place on a baking sheet. I'm not too fussy about size and shape but if you do want to roll more uniform balls you may need a little extra flour on your hands to stop them sticking.
Bake in a preheated oven 220C for around 15 mins or until golden and puffed up.
