Breakfast for many of us who want to eat well and avoid nutritionally deprived sugary cereals and bread, it can be difficult to know what to eat for breakfast.
I thought I would share this easy to make meal that is a great way to start the day and also a great lunch. It contains a healthy gluten free grain 'Millet' which is packed with nutrients such as Magnesium, Calcium, Zinc and B vitamins. It is also high in fiber which aids the process of healthy digestion and elimination and feeds the good bacteria in your colon.
Ingredients (makes enough for 2 servings)
4 heaped tablespoons of Millet seed
2 cups of vegetable stock
A handful chopped vegetables (I used beetroot, butternut squash, broccoli and Kale) This is also available frozen from Tesco's as a mix which is a great time saver in the mornings!
Cherry tomatoes 6-8
3 mushrooms chopped
6 rashers of organic bacon (Can be swapped for tofu if you are vegetarian).
Put the millet and vegetable stock into a pan with the chopped vegetables and season with a little salt and pepper. Cook for 10-15 mins until the millet is soft and fluffy and most of the stock has been absorbed.
Whist this is cooking fry the chopped mushrooms, cherry tomatoes and bacon with a little coconut oil.
Drain any excess water from the millet, combine with the bacon mixture and enjoy!
